This is explained within the game.
When a person dies, their "soul" or "essence" is still in existence. If they died an untimely death (anything that is not natural causes), then the person will begin to question his death, unable to cope with it. The confusion becomes cynicism towards life (while not stated directly in the game, it's pretty clear that a person must become a cynic, otherwise, the future path they tread will not make sense). Then jealousy erupts, and then anger forms, and eventually hate dominates the person. After a certain point in time, based on the person's outlook toward life (and death) and the events that led to his death, his own emotions turn against him, and the pyreflies that sustain his existence react to the ill-harbored feelings of the person. Unable to change their feelings (and form), they permanently become Fiends, only to see no remorse for any action they may take from that point on.
Being killed will end their suffering, as they are beyond the point that a Summoner can clam them without confrontation. Or, so we assume. There are some exceptions (although, none in FFX).
However, if a person deals with death, and accepts it, whether it be unnatural or not, they are able to skip the entire process of jealousy and hatred toward those who are alive, they go directly to the Farplane, and the Pyreflies there, react to the memories of a visitor, and if they are dead, then an image forms. There are some exceptions, and even Dream Zanarkand people can appear, but only because of the memories of a Dream turned real. There are few exceptions (but there are some in FFX-2).
Yet, still, there are some exceptions. If a person's will is strong enough, they can remain on Spira without going to the Farplane, especially if there is some unfinished business for them to do. For example, Auron was able to stay in Spira, because of the strength of his will, and the fact that he made a promise. They usually return to the Farplane without becoming fiends. Or, so we think. Exceptions can be found in FFX-2.
If you interpret it in a way, Yuna can also be used as an example. In FFX-2 (based on the interpretation that she is actually dead, but that's TOO confusing for the likes of this explanation).
It is thought that people are really just collections of Pyreflies, some more than others. A Summoner is trained specifically to be able to quell the raging spirits of the unsent, in order to allow them peace on the Farplane. Summoners must also have the knowledge and ability to manipulate Pyreflies, as can be evidenced by the summoning of Aeons, which are gigantic amalagations of Pyreflies.
The theory behind Pyreflies themselves, is for the most part, very confusing. And in some cases, contraditctory. I'll not delve into the detail as of yet, as it has not yet been asked of me.

What about in Via Infinito? The unsent / fiend barrier is blown wide open, isn't it? Or is it explained on the last floor?
No explanations on the last floor. But it could be just an illusion....

People become unsent cause they regret playing X-2.
Anima the Aeon is not. Anima the Latin word for such a concept is truth. Anima the Aeon is named for the concept.Quote:

a. the soul-latin
b.the unconcious part of someone not shown in personality -jungian psychology
c.the femenim inner personality found in both males and females and animus is for masculinity * as mentioned this proves anima's gender -jungian psychology
it has to be one of the three i think it is all 3 in a way..
a.anima is seymours mothers soul
b.the evilness that is in seymour but not shown through his personality-maybe even his mother is evil who knows because u seen how evil anima is
c.seymours mother is anima and most of your anima is based of your relationship with ur mother so that is a connection i see there
