But first, do my points go into vit as I have done? Or do they go into dex? Or can I split them, dex-vit-dex-vit?
No points go into Vitality until Str and Dex requirements for equipment have been met. A few points here and there is okay, so long as you can equip your median equipment before your end-game build. By level 50, your points should look like this:
Str: < 100 unless equipment demands require it, or +Str equipment is had
Dex: < 100 if not base; if higher, then higher
Vita: ~ 100-120
Eng: none
At level 80:
Str: enough to equip, within 10 points of highest equipment
Dex: enough to equip, within 5 points of highest equipment
Vit: everything else
Eng: base
I'm going full glass cannon myself. My plan is to have more than 500 points in Dex by the time I hit 90.

...well, Median is Elitist, because it's incredibly difficult to play. I want to finish off Cathedral of Vanity so bad, but the Crystal Ball keeps pawning me.
