I have to give props to Luca Blight and Albedo, but another good death is (SPOILER)The Boss from MGS3.

Near the beginning of FFT (before Dorter) I was in the plains and sent my chemist to the other side of the stage to revive a fallen knight, only t6o realize that the chemist couldn't use phoenix downs. Fortunately, I was able to end the battle before the knight died.
