Wavepad, Audacity, Media Monkey, and MediaCoder all can convert most other audio files into formats that can be read on an iPod. The first two are audio editors and maybe require some (minor) work, whilst the latter two do conversions with simple commands.
I suggest either buying music from the iTunes store or ripping music from any CDs that you own if you want music files.
Ok, I have a good view now, thanks everyone. I'll try to find a good prog in one of the places you pointed to as I have tones of CDs and don't need to buy music.
