I agree with tuh. You can't help that you got sick. They should reschedule for you.
I don't do anything when I get sick. I just take it and feel like ass. :(

Do you think you could do the video thing? I know you want to do early decision (and you know I think it's the biggest rip off ever xD) but I'd carefully consider what would be best - singing coming off of sickness or knowing you got in (cause you'll get in) later than you want while you blow 'em away?
Just let it simmer on the backburner as you "in case :skull::skull::skull::skull: hits the fan" plan. :)
But if I don't apply ED, I really don't think I'll get in. xD NYU is really tough. I only got an 1830 on my SATs, and my GPA is barely 4.0, meanwhile everyone at NYU got 2000+ and have GPAs off into the stratosphere. D:
Water. Lots and lots of water. Keep your throat hydrated. Your body needs fluids to produce enough mucus to "drown" the bacteria present in your throat, so the more you can provide the better. Also be sure to keep your vitamin levels up. Vitamin C is the most commonly quoted, but nearly all of them are useful in combatting disease. If necessary take a multi-vitamin. Also if you're going to a singing audition try to avoid coughing unless you have phlegm on your throat. A dry cough causes rawness to the vocal chords due to the air being expelled roughly against them. Take an anti-cough medicine, drink water, or as a last resort just try not to cough.

I know this may sound disgusting but swallowing slices of ginger whole proves to be quite effective in curing sore throats. If you don't mind ginger's taste you can also chew it up and swallow it.
That worked for me.
I had a really sore throat about 2 weeks ago, so I blew my nose as much as possible (thats what irritates the throat) to completely clear it then gurgled salt water for about 5 minutes. Completely rank but it helped loads. Then drank loads of fruit juice.
If you've been over-stressing your voice box, don't practice at all. I know that's pretty drastic advice, but if you want to avoid a hoarse singing voice, it's the best thing you can do.
By the way, I first read the title of this thread as, "cutthroat bitch".
