I never really understood why people call Flying Mullet “Mulley.” It has the same number of letters as Mullet, and the y key is actually slightly farther away from e than t is. Plus Mullet is a cooler word so... I don’t know. Mysterious ways and all that bother, I suppose.

It comes from the way we pronounce his name in the French manner, where the 't' at the end is silent, so it sounds like moo-lay. Over time this led to the change in spelling, as spellings often change.
