Gestahl would actually make for a cool boss fight. He could just fly the coop once you got his health down far enough, allowing him to die later the way the story intended.

Gau's dad. His eccentricity would annoy the enemies until they finally submit and are forced to fix his stove.
The inn keeper of thamasa. If Strago isn't in the party (which if you're anything like me, he probably won't), he'll charge a ridiculous amount of gil for every move you make.
Why not the innkeeper in Vector. I want my money you stole you SOB! :mad2:
I'd go with Siegfried/Ziegfried. I know one name is supposed to be good and one evil, but that few second encounter with him on the Phantom Train didn't satisfy. I was always thinking: "you know, if you're so great, then why did you run after one hit?"
Can't we just have it all and fight any NPC we want, ala Ultima 3?
The wolf in Narshe who bothers Mog.
Gaus dad, the crazy old man finally pays you a pay back for not fixing his clock or his stove or even doing his lawn. He throws stoves clocks and lawn mowers at you.
I like Flying Mullet's idea, whenever a character says something stupid you can throw a fireball in their face!
Gung Ho
I wanna beat that old geezer to a pulp... he never shuts up! Even when you prove his ass wrong!
OT, but, was Zigfried supposed to be exactly like Gilgamesh or what?
Cid although he's suppose to be a returner. He'd have some sort of tools/magi-tech hybrid ability?
The treasure chest in Ebot's Rock. It would have MP shave, hallucination, and a Coin command of its own.
