I won't address your more specific points as it ultimately seems to come down to one thing: it just sounds an awful lot like you don't like slapstick comedy.
Zombieland was pretty standard in that aspect. It's crass, brutal, and inappropriate humor. Zombies being thrown in just gives the opportunity to laugh at over-the-top gore, blood, and violence. It amused me greatly in the process. If it didn't do so for you, bummer, but I'm going to have to take a wild shot in the dark and say you're in the minority.

Just because it did it first doesn't mean it did it well. Pioneering a genre does not inherently make the movie good. Important, perhaps, but not good.
