Cauliflower is good. Spinach not so much. That and I can't really have it because its high in potassium and that is something I need to avoid or limit myself eating. :<

Spinach is ok, but is pretty bland by itself. It's tolerable in combination with other things, but I can't say that I'd actually miss it in anything. It's just meh.
There are plenty of far greater vegetables.
Weird thing about it is that the anti nutrient in it takes away iron and calcium, not sure how much but you be getting as much.

Apparently cooked spinach gives more a vitamin but, of course, at a loss of other nutrients.
