Griegs "Hall of the Mountain King" would work well. If you want something more modern, then I reckon Iron Maiden's "Phantom of the Opera" and Rammstein's "Spieluhr," especially given the spoken part at the beginning could be used to introduce the final fight.
I mixed around with the chord of Meat Puppets - Lake of Fire and got something that would make a groovy boss theme.
"Night on Bare Mountain"(?) by Mussorgsky is a great piece of music, it'd suit some games really well. Actually, it was used in the original Earthworm Jim.
