Dark Messenger is probably the best one I've heard. I don't know why, but I'm not really fond of boss battle music. It's always my least favorite song on the soundtrack. People need to come up with better Boss Battle music. :(
In my opinion, of course.
I still like the music from Castlevania:SoN and my fav. battle score from FF7 is either the Sephiroth boss music or the regular boss music remixed by the Black Mages.
