FFx-2 in my opinion. Its the only one where I've levelled up enough to beat the optional superboss (catnip and trigger happy).
X was the easiest IMO. Once you get deep into the Sphere Grid, you can really beat the game with three characters.
I wouldn't consider VIII easy just for the fact that some stuff in the game(i.e. Boost, getting Doomtrain,) I didn't even know about until I read a guide for it. But then again, I did handle the final boss with some ease.
VII was also easy to me, seeing as I beat the game without Vincent, without any ultimate weapons, and without any ultimate Limits. Hell, I didn't even have the Knights of the Round summon or half of the summons in the game for that matter.
FFX-2, I found the bosses too easy, even the sub bosses.
I never got killed, that's how easy it was for me, ah well, least I beat it.
It's between X and X-2, I think. Although for me, X-2 never got to the point of it being insulting, whereas X did. Stupid Yu-Yevon.
FF1 and FF10 are IMO the easiest ones. FF1 is so simple and uncomplicated (especially compared to the others) and once you get the hang of FF10's battle system, it's a breeze.
