Irvine and Laguna were named after two cities in Southern California, Irvine and Laguna Beach. Thus, the pronounciation of the cities is the same as the characters.
Irvine = urr-vine
Laguna = lah-goo-nuh

Chocobo - cho-ko-bo (I used to pronounce it as 'ko-ko-bo', but assigning the 'ko' sound to both 'cho' and 'co' seems wrong).
Bahamut - bah-ha-mut ('mut' is more like 'moot', here - a long 'u').
Ramuh - Raam-uh.
Esuna - Ez-yoo-na.
