Well, I saw only a tiny bit of Champloo but it seemed pretty cool. I would reccomend Inuyasha though. If you can't seem to find any more animes then try watching something else.

cowboy bebop
Bebop was my favorite anime for a long time, until I saw Escaflowne.

Scrapped Princess, if you haven't already. Quite possibly the best series I have ever watched.
I saw a few episodes of it on Winamp Internet TV when I first got version
5, and it looked wierd as hell. I've heard a lot of good things though so
I should probably check it out.

Scrapped Princess is really good and interesting(on episode 8 my self) although I hear nothing but bad things about the ending.

I'd say you should go with Naruto or Trigun here are a simple outline of the series so basic it contains little of no spoilers {unless you purposely stare at your computer looking for them}
Naruto:
Uzumaki Naruto is an academy level ninja with no friends or parents, his teacher Umino Iruka is his parent figure, Naruto wants to become the best ninja in his village so he can get aknowledged by the rest of the village.
Trigun:
A famous outlaw by the name of Vash the stampede or the humanoid typhoon as he's called has 6,000,000,000 double dollars on his head Meryl Stryfe and Millie Thomson are sent out to find and keep him under surveleince though once they find him {though they don't know it's Vash at first} they find out Vash is a fun donut liking guy. Though Vash gets in many fights in this 27 episdoe anime.
The ending is good. Don't listen to those who said it sucked. I could go on about why it was good, but that would spoil way too much for you.Quote:

Thanks for the list HIK, you seem to be right on because I've seen most of
those and liked them. I haven't seen Noir, s-CRY-ed, X TV or 12 Kingdoms.
The others I've seen all the way through except Stand Alone Complex
because what I saw of it wasn't that great and I wasn't a huge fan of
the original movie, and RahXephon which maybe I should check out again
because I don't really remember it.
Trigun was the first series I saw and I didn't think anything could beat it,
my friend let me borrow Bebop and I tried to watch it but only the first
half of each disc would work on my PS2, so I didn't see: Ballad of Fallen
Angels, Jupiter Jazz (1/2), or The Real Folk Blues (1/2). I gave it back to
him and said "yeah it was alright." Then I got a DVD player and watched
the entire thing and I was simply blown away. But yeah, Trigun was
amazing as well, Legato is probably my favorite villain of all time.
I still haven't seen Paranoia Agent but my sister watches it on [as] all
the time and she says it's good, so I'll probably watch that with her
next time it's on. Thanks for the suggestions all.

BECK is a great choice, the only down side to that is that the last two episodes basically cram the whooole second half of the story, which could have been an entire second season, into two damn episodes. It's extremely dissapointing and almost painful to watch. If I were you I would skip episodes 25 and 26 and just finish off the BECK story with the manga. Good, good stuff.
As for my suggestion, I fully and honestly recommend Yakitate!! Japan, I'm currently obsessed with it, probably as much as I was obsessed with BECK when I started it. It's up to 32 episodes and going strong, one of the better animes I've ever seen. It's hilarious, entertaining, educational, and just all around interesting. The characters are great and it's got me waiting for the next episode with high anticipation every week.
The best part about it is that it's about baking bread.
Also try RE:Cutie Honey OVAs it a remake of an old 70's anime by Nagai Go,but the current one is made by Gainax and Hideaki Anno.
I think you will enjoy it if you don't mind a bit of ecchi
