I like the openings for Bleach, and the first ending of full metal alchemist.

For openings, King of Bandit Jing, Final Fantasy Unlimited and Azumangah Daioh are some of my favourites.

For closings, King of Bandit Jing, the second closing of Final Fantasy Unlimited I liked.

I also kinda liked most of the Digimon closings, showing the evolved forms and stuff, some of them looked awesome (For that age anyway >.>)

Fresh Prince, Ninja Turtles, Doug (cartoon)

Anime openings: Eureka 7's 3rd I like the best (Taiyou no Mannaka He), but they're all good
Cowboy Bebop, Samurai Champloo, NANA and R.O.D. (TV)'s music are awesome.

As for endings, I really fell in love with 'Hanabi', which is the closing before the one that's on now for Bleach.

I love how anime uses real, existing artists that do other music. I've discovered some great musicians through anime-- Asian Kung Fu Generation, Ikimono Gakari, Tommy Heavenly6, Home Made Kazoku...

I listened to some of the endings of Inuyasha and I think they're good, also.
