"Doki doki" is the Japanese onomatopoeia for the sound of a heartbeat. It's used to imply nervousness.

It's actually one of those words in japanese that describes a sound. "Doki Doki" is supposed to be the sound of a heart beating. The title is supposed to imply that your heart will race if you play the game because it's just that exciting.
