Well, you fight five battles, one per car of the train. However, one of the battles has two enemies. So, I will say 6. Actually, I think the last battle is a couple of shinra guard dudes, so maybe its 7.

There are four: Ruby WEAPON, Ghost Ship, Midgard Zolom, and...Hungry! It's in Sango Valley. It casts Mini on a party member, then eats them on the next turn. I thought it was staggeringly bizarre/hilarious/staggering when I first saw it.

Yes, you're right about where Sango Valley is. In the game, it's erroneously called Zango Valley. This is certainly wrong, though; sango means --get this-- coral. And the whole valley is...full...of...coral.
