Ina Garten approves of bacon+maple syrup and Ina Garten is always right! I think the bacon+maple syrup was also a winning dish on Top Chef. Iron Chef Cat Cora also served bacon glazed with maple syrup once and called it "pig candy". So it's a pretty popular combo!
I love bacon, and I love it as part of one of my favorite sandwiches, the Club.
Now this is just crazy talk. Bacon isn't bacon unless it's crispy. Then it's just like... a piece of pork.
So you only like meat if it is indistinguishable from burnt wood?
I don't go as far as my mom and demand that the steak be able to fight back, but anything more than medium rare starts hurting the flavor and tenderness of the meat. And bacon should be greasy and chewy.
Bacon is fantastic when either completely floppy, or with a hint of crispiness. Although every once in a while I love to cook it until it's rock solid. It's pretty good that way too, but not as good.
I enjoy eating raw smoked bacon. Which is an oxymoron cause things that are smoked aren't really raw.

Crunchy bacon is best used in sandwiches.
