Would the "red oversized" be the Galbadia Garden? I'm thinking it has something to do with when you fight Edea and Ultimecia isn't possessing her anymore. Like everyone forgives her and stuff and remember she is matron.

I may be taking an unusual understanding of your use of the word "past" or even "mistakes" for that matter, but could it be when you enter the prison cell in Ultimecia's castle and you have to defeat the Red Giant to get the key in order to escape?
I anticipated that guess, but sadly that is not the answer I'm looking for. The "red oversized" is not the Red Giant, despite the epithet being fitting.

They are optional mistakes, i.e. they could very well be avoided to begin with.
Sounds like the cards to me.... the high level ones like Squall.
The mistake can be rectified aboard ragnarok if you missed them earlier, such as Quistis holding the squall card and other people aboard holding the others.

Pretty much I'm going off the big red button. I originally thought about the mistakes being whatever happens in the Missile Base with Selphie, and then I thought that (iirc) the button to activate Garden's flying mechanism is big and red (one red oversized). It's all I've got!

All I can think of is some status-refreshing magic, like dispel or esuna, but I don't remember them being red. Isn't Carbuncle's skill ruby light? Rubies are red, and it has one on its forehead. It's not exactly "oversized" and it doesn't neutralize any mistakes, so that can't be right.
I'm just taking random stabs here, hah.

Pretty good guesses, but none right. For future reference, it's generally frowned upon to give more than one guess before the riddle maker has confirmed or denied the first one.

But as to what mistakes of the past, I have no idea. Perhaps the mistake of the past was when they failed to assassinate Edea (the plan was drawn up by martine @ galbadian garden) and they then make up for this by attacking Galbadian garden head on against Seifer and Edea once more later in the game
Nope, it's not Galbadia Garden being referred to. The mistakes would be more on the player's behalf.

I've never gotten that far, but are the bosses you can draw missed GFs from red? Missing GFs isn't always a mistake, but you can fix that by drawing them later. I dunno :/

They're made by the player (I should reinforce that whether they are mistakes or not is highly subjective, although correcting them would imply that they were considered as such), but they aren't relevant to the plot at all.

The Limit Break gauge. The bar is red and once it starts filling up or "oversizing" it allows one to neutralize the enemies. It can also be accessed via the menu in battle.

the only thing i can think of correcting mistakes with menus is when you choose the instruments when you get the other half of your party from the missile base back >_> correctly choosing the instruments by reloading if you get it wrong... man this is a real stab in the dark XD

Neither. Remember that the "mistakes" are only mistakes if you consider them as such! Letting a party member die is definitely a mistake except in very specific circumstances, and I don't think your SeeD rank dropping is ever anything else than a mistake.

When your fighting Seifer in the lunatic pandora, if you have unlocked Odin... odin will come and try slash Seifer but Seifer will own Odin and Gilgamesh will get Odin's sword which becomes his 4th. If you then dont defeat Seifer after a certain amount of time, Gilgamesh will come and defeat him for you.

Odin! When you're in Centra Ruins, you have to choose between getting him or "the green", i.e. Tonberry King (lines 1 and 2). Seifer "reverses" Odin's attack which defeats him (line 3 and 4). He's replaced by Gilgamesh (line 5 and 6).
