I love the entire opening of Final Fantasy VI as they march through the snowfield. It all fits together so well.
Yeah, it's cool to see all the machinery in Narshe on the cliff in front of them as they approach.
I'd go with FF7, though. I love the epic look of the intro FMV with the logo appearing right as the music suggests it should, and then it zooms into the other side of Midgar where the game begins. Seriously, I love that music.
I'd have to say either FF6 or FFX-2 (one of few good things about the game).
VI or VIII. All so amazing
I'll have to say well i don't remember IX's, but I'll say it anyway. X-2's song was great
The piano collections version of Eternity is even better, and twice as long.
Love the climax at the 4:00 minute mark.

Are we speaking of the actual opening of the game once you hit "New Game", or simply the prelude?
You can talk about the menu music or the first piece that comes up after hitting "New Game".
I WAS just talking about the menu music, but both is better since a few a similar etc.
"The Opening theme" in FF1 is great (it plays when you cross the bridge), but FFIX's "Memories Erased in the Storm" and "The Skies of Alexandria" are excellent opening themes (the former plays during the actual intro FMV, the latter plays during the second FMV, when the FFIX logo finally appears in the screen). FFX-2's "Eternity - Memory of Lightwaves" is also excellent, and so are FFXII's three opening songs: "Loop Demo" (the Prelude), "Final Fantasy ~ FFXII Version" and "Opening Movie (Theme of FFXII)".
Out of these, I'd probably pick FFIX or FFXII's Opening Themes. However, FFX-2's is great too. Kweh, it's hard to decide! :p
Liberi Fatali when you start a new game of FFVIII is of course fantastic. Also I love The Place I'll Return to Someday which plays over the intro screen to FFIX (the other songs when you start FFIX are good too).
VI's Opening is by far the best
Hmm...tie among FFVIII FFX (Tidus has all of my favorite quotes n.n) and FFX-2
For me it is between Liberi Fatali from FFVIII and Bland Logo - Title Back from FFTactics
The best menu music is FFIX's 'The Place Ill return to Someday'. Easily.
I also love 'Otherworld' from FFX but thats not right at the very beginning.

Otherworld just changed the whole dynamics of the game for me, perfect song. Loved it. At the beginning and then at the end, well actually, it plays after the opening tune and before the final battle. Coincidence, huh?
