If you won a Noble prize, what category do you think it would most likely be in?

Peace, most likely. Maybe something I do in the future might count as physics, but peace looks to be most doable at this juncture.

(Apparently if you win one of the Nobel Prizes you also win 10,000,000$ SEK (Swedish kronor) ... not sure how that translates to in USD/CDN... but I'm sure it's probably more than!

Yes. Although I'm sure each category has seen its fair share of breakthroughs to help mankind in a tangible way only the applied sciences have real potential to help us here and now.

Anyway, if I had to win one, it would be for Literature of Physics, but only in theoretical physics, like I would somehow manage to understand modern physics (stupid Newtonian physics) and then come up with some concept that changes the world.
