The Burnout games were generally really fun "gimicky" racing games
That is no bad thing at all. Mario Kart 64 is an amazing game. It far outstrips any of the subsequent releases (even the awesome new DS one). But nothing can compare to the original balloon game in Super Mario Kart. I could literally play that every waking minute for the rest of my life and not get bored.
The Introduction of the Blue Shell was by far the worst thing that happened to the series.
The three 'outs'. Wipeout, Burnout and Mario Kart N64 ...out. :shifty: And not so much the recent Burnouts as the old-school Micro-Machines styled ones. Damn, they were so much fun with friends over. =]
EDIT: Special mention to Road Rash, NFS: Hot Pursuit and (although not so much for the racing aspects...) Destruction Derby.
Diddy Kong Racing was also pretty great. Except for the hovercraft. Screw the hovercraft.

Need for Speed: Underground 2 remains the pinnacle of all that the racing genre has achieved in my opinion.
Gonna have to level here: I hate Diddy Kong Racing. Every single vehicle type, every level, the weapons and characters. None of it grabbed me.
Mario 64 is freaking amazing though. Everything that was good about the original was back (except the sheer number of levels I guess and the feather), and despite adding the blue shell, it was so rare it barely mattered. Plus, it was before the rubber banding AI got so completely out of control that games became a matter of random chance more than skill (I'm looking at you anything post-Double Dash).
No mention of a Gran Turismo game yet? Let alone the best one, GT4? For shame people.

Also, Road Rash was great.
I used to love Road Rash. I never owned it, but I would always play it at a friend's house whenever we had the chance. I also have had many a fond moment with Cruisin' USA.
