Chicken is the way to go for almost anything.
The best fajita I have ever had was homemade for me by a little Mexican lady who is a friend of my family.
Not much of a fan of them. Prefer quesadillas. If I was going to have one, it'd be beef. Dislike chicken and hate seafood. :x

Most of the time they are served on a hot skillet making all sorts of cooking noises. Freaks me right out.
