Pasta. I make a lovely pasta with chorizo, herbs and cheese. Simple, yet so damn good!
I tend to have the pasta more often than not.

I guess there's some buckwheat, or spinach, or sweet potato noodles that are flavorful. The main noodles I can think of that hold their own or all the different guksu. Dotori guksu was pretty interesting.
Still, I care about the toppings and sauces that are served with them way more than the noodles.

IF I did have to choose between asian noodle cuisine and Italian style pasta, I would be hard pressed to make a real decision. I love them both a lot. Two of my favorite food types.
