Any movie with a score by John Williams. Although I agree with Optium on the Cowboy Bebop film having a great score, Yoko Kano is genious. The Lord of the rings had a very moving score too.

I'll be lame and agree with Cowboy Bebop, first off.

That said, Howard Shore is a musical genius, and the LotR probably has my favorite musical score ever. Beautiful stuff.

The Village, also, has wonderful music.

The Lords of Dogtown. Groovy Stuff.

Dragon: The Bruce Lee Story had a very emotional musical score. The Fellowship of the Ring's score was quite nice as well.

Most of if not all of the Hayao Miyazaki films have excellent music. I can't say for sure since I've not seen some of them.

Also, I really enjoy the ambient music in Ghost in the Shell, it generally sets the mood quite well.
