The mini game in FF X-2 where you use Yuna to shoot monsters down in Besaid. I think it is called Gunner's Gauntlet.

Triple Triad and the snowboarding game in the Gold Saucer. For some reason, I think I've had more fun playing that snowboarding game than any real snowboarding game I've ever played, even though real snowboarding games are technically "better".

that motorcycle game in the Gold Saucer in ff7 tops the list. :) chocobo hot and cold was pretty fun, and racing wasn't bad if you just wanted to play something. i couldn't play blitzball for my life.
