Well, it has been down for a few days one time, ages ago.
I'd just do something else. It's not hard to break away from FFXI.
If I couldnt play for a month I'd want the money for that month back.
Then, I'd probably do what I do now.. I dont play the game very often and most of my time is spent crafting now.
Yeah I'd get my money back and in the meantime read or play Kingdom Hearts II (soon to be FFXII!).
Normally, my answer would be that I would go about business as usual. I haven't been addicted to that game - or have even logged on, for that matter - for a very long time.
But in my experience, the server never goes down until I want absolutely nothing more than to play FFXI. This is probably why I never play - I only want to when there's maintenance.
So I guess my answer is that I would become very angry and throw things. I would refuse to play anything else, because I'm really that rebellious.
I don't think that it would affect me very much, but I'd wonder if they were experiencing severe technical difficulties and if my character, server, and credit card information was safe.
A lot of other stuff, since FF11's a side-game for me at best.
If the server went down I swear I would have Final Fantasy withdraws.
Thats worse than any other kind of withdraw somebody could go through.
What would i play in its stead? Socom or Rome Total War

I'd go play one of those other games that I've been meaning to but never get around to because I spend my gaming time playing FFXI.
