The show is not going down the Robert Strong route, they're quite openly going with "Qyburn did something to Gregor Clegane, smurf knows what but smurf me it scares me" route
They didn't refer to him by his real name when he was first introduced though. I think people just aren't fooled because seriously, how many giant mothersmurfers are there in Westeros?
Authors sometimes use the fact that books don't have a visual component to create some additional mysteries for the reader (like Barristan as Whitebeard). On the show we know what the characters look like so unless you use magic you won't be able to pull that over on us. So they don't bother with those 'mysteries'. As Vivi said, with Frankenmountain there's clearly no other character in the series with his stature and I don't think the viewers would be fooled or impressed by trying to hide who it is under that helmet. Since we aren't fooled, there's no real point in trying to fool the other characters, since, come on, that guy sticks out anywhere.
