Here's an easy way to defeat Yu Yevon. Get rid of the Pillars first (just attack them) Then cast reflect on your characters and Yu Yevon is now powerless. All he will be able to do is drain your MP....

I only beat him once (second time, first playthrough). Frog Drop and Reflect and Regen were very helpful.
