The 3 guys are the trophy mounters.
Talk to the boss, he will give you the count you have so far.

Your first trophy must have been from the first Rare Game eh? You can ask the boss who you have given the trophies to.
I'm having the same problem. I've defeated all 30, but the huntmaster says I've only turned in a total of 29 trophies. But I gave the huntmaster the first one! And once we've bashed those baddies, they don't respawn. So now what!?

The first trophy you gave to the Huntmaster in Phon Coast doesn't count. You have to actually defeat 31 monsters to get the 30 trophies that can be given to Atak, Blok, or Stok.
Look for the Binding Mantis in Golmore Jungle.
