The best summon, in my opinion, is Phoenix. It does fire damage, yes, but it also serves to, in most (if not all) Final Fantasy games, revives a character in full. This is extraordinarily helpful in most situations.
Bahamut is a good one for its ability to deal high damage for a decent cost. What makes it so good is that the damage is non-elemental.
My personal favorite is Final Fantasy VI-era Alexander.
The almighty Shiva. In ALL games but there is one version of her that holds my "summoner" heart and that is:
FFX Shiva.

I never really used summons in FFVI or previous. Summons became far more useful in FFVII and after, I think. That being said, I loved FFVIII Doomtrain, solely for the meltdown affect on basically every enemy.
