Neon Genesis Evangelion is at the top of my list. Cowboy Bebop, Trigun, and FLCL are pretty close, though. I've got a special spot in my heart for Full Metal Alchemist, but it's definitely not one of the best I've seen (and after reading the manga religiously, it begins to pale in comparison).
