There isn't a new Morrowind, but there is a new Elder Scrolls game called Oblivion.

And afaik (from looking just a few days ago) there's no mature Xbox or Gamecube emulators out yet. PCSX 2 is pretty far along, though.

I don't play much PC games, but what I have and enjoy are...

Civilization IV
Arcanum (I don't know if it's even possible to get that game any more)
Black and White

And of course every kind of sim you can imagine.
