As you can only fight one boss per time through the cave, you have to fight through the cave multiple times to beat all of the bosses to get them all in your beastiary. Also, you can defeat the same boss multiple times if you want to get their rare drops multiple times.
Okay thanks for the help, I kept killing the same boss over and over lol.
