Every soundtrack has plenty of these songs. I think they just choose the best songs and not the songs that would sound best on the piano. I've heard less than ten songs from Piano Collections albums, but from what I've heard, it's pretty hit and miss.
I would've said it was more hit than miss. Some songs that I didn't think would translate particularly well over to the piano, like Final Battle (FFIX) was actually fairly decent. I really enjoyed the FFVII-IX piano collections and can only think of one or two that weren't done that well.
