It would have to be a Monk. I know they're strong but they have the least variety out of all of the classes.
When you reach Kraken with a Knight, Monk, anything but thief party there's no reason not to kill it in three turns with unfast characters. If one character is a Black Wizard it's even faster. Tiamat isn't much harder, especially if you use the Bane sword. Where exactly do you need fast again? Nowhere!Eh? FAST is never useless!

Now that you mention it, beating the game with one Fighter wasn't hard, just required patience. He didn't have FAST either. Shucks, you win

your point about the thief stealing is horrid. There were no special abilities in this game, just fight, use items, or magic. None of those other special abilities. Thief could move fast, and escape from battle. Notably, this became a skill in later FFs. So technically he had the only skill they could actually give him.
