I try to vary my party between playthroughs as much as I can. However, I almost always use one white mage (Dagger/Eiko) up until the point where everyone in the party has Auto-Regen. At that point, I sometimes replace them with a "semi-healer" (Amarant/Quina) Either Steiner or Freya are usually in my party as well. Vivi is probably the character I use the least, though capable enough. Sometimes I squeeze him in as well though.
Zidane - Thievery
Quina - Frog Drop and other Blue Magic
Freya - Dragon's Crest, White Wind, etc.
Vivi - Doomsday and Flare
