knights of the round. Lvl up, quad cut materia.. a lot of things
If you mean Ultimate Weapon, then I've always found a fairly general battle strategy worked well. Beef yourself up with Big Guard (enemy skill) and basically prattle off your best attacks until he dies.
If you're on about Emerald and Ruby, then I'll refer you to this thread which has some rather decent strategies suggested by Xurts and Zeromus_X.
