Android Lust's cover of Slice of Life is quite amazing.
Mad World has seen countless covers, most of which are better than the original.
Pretty much any Apocalyptica cover of Metalica's songs are, in my opinion, much better. But this is more or less fueled by the fact that I do not care for Metalica, and have a fondness for the genius found in Apocalyptica.
