Ok so I have gotten this game and I am loading it on my computer...what is the.......
"Best" class, server and other stuff for someone who likes theives?
Server doesn't matter unless you have someone you want to play with. I'm on Alexander, but it looks like Pandemonium or Midgardsormr is the place to go if you want to play with EoFF'ers.
For people who like thieves...well...play thief.
No best class, all classes have their use. Read up on wiki.ffxiclopedia.org or ffxionline.com about the classes and try out the ones you think you'll enjoy the most.

Where can I get hunter/ranger because that and ninja is the main two I plan on using
also I know citzen bleys said alexander and pandemonium, but where is most us EOFFers at?
Ranger and ninja are advanced jobs. You need to unlock them, and the level requirement for the quests that unlock them is level 30. That's probably for the best too, as ninja and ranger are rather expensive jobs to play, and you probably wouldn't be able to fund it well enough if it was your first job.

Me and Del Murder are on Pandemonium and Ouch! and Omecle are gonna join us there soon. I don't think Midgar is heavily populated with EoFFers anymore. There's another server that has several EoFFers on it I think, but I can't remember which one.
well I will join Pandemonium so I can hopefully get help from people I know wont screw me over

Er, I didn't say there were EoFF'ers on Alexander. I said I was on Alexander. I am the only one on Alexander. Just me and a bunch of JPs. We meet every afternoon (well, 4AM for me) for tea.

I'm sure Del Murder, Miriel and I can get you through the basics.
THF can be maximized by playing mithra but I find for RNG and NIN, elvaan are the best but really that is all up to you.

I need to start a mule on one of these servers just so I can bug some people in real time.
As for jobs to be, I say go Galka Dancer, or try Puppetmaster. =D I love all the jobs that are against the norm. The newer jobs are much more fun, though slightly gimped, in my opinion.
Though I say play a job that fits your playing style. Or better yet try them all out to 20 and see if you like it.
As far as THF goes, expect to pull and do meh damage for a while. The good news is 75 THF/NIN full evasion gear is nearly untouchable.
