Yes, you are absolutely right. Tekken 3 had the best character themes (Bryans is epic) and Tekken 5 had the best stage themes (This being my favourite)
I love the Tekken 3 ost but i think it's mostly because of nostalgia.
I'm currently addicted to the dark resurrection ost which imo,is the best in the series.
Some of my favourite themes:
Moonlit Wilderness
Give me your Name
Call of the Inferno
Snow Castle

I've always been a fan of Tekken 3's Jin music. Which they re-used for the Devil Within on Tekken 5 which made me so happy.
Moonlit Wilderness is pretty awesome too.
Chicago from Tekken was good.
My favourites from Tekken 3 are Lei Wulong's and Nina William's themes. Both are epic.
Though, I probably only like Lei Wulong's because I'm listening to it while wearing nostalgia earplugs. ;/
