FF X and XII are both must-have games if you like FF at all. You could also take a look at LotR: The Third Age, which is basically a FF-X rip-off in LotR wrapping.
If you like mediveal rpgs, you could take a look at Baldur's Gate: Dark Alliance 1 + 2.

Which Final Fantasy Character Are You?
If you can manage with tactical RPG's (well a light tactical, this ain't no FF: T deep tactical game) then I suggest Arc the Lad series. They have a nice slew of characters, and interesting world concept (modern world mixed with fantasy, magic, and kingdoms) and a lovely story. If you can shell out the cash and find the Arc the Lad collection you'll wind up with 2 awesome RPGs (Arc the Lad 2 and 3) and one ok RPG (Arc the Lad the First) plus there's a squeal to them on the PS2 (Arc the Lad: Twilight of the Spirits) although their all continuity based you can still enjoy the games in any order, it just gives a lot of nostalgia feelings if you play it in order.
If you can deal with action RPG's then I suggest the .hack// series. Especially G.U. which did everything the first game series tried, and did it much better. It's a fairly fun game series, although each volume is a bit short if you play only for the story, but there's plenty of just random game things to do unrelated to story strewn about.
Oh and as was mentioned earlier, Threads of Fate....get it....nao!!!!

Persona 3 is far and away the best RPG on the PS2. Get the FES version, which is probably the only one you can get in stores right now.
Next to that, Dragon Quest VIII. And, if you're lucky enought to be able to read Japanese and/or have a Japanese PS2, Tales of Symphonia. If you don't have such luck, Tales of the Abyss is a worthy second choice.
