Because I'm so anal and such a fan girl that I would keep it 99% accurate to it's original.
I would put MORE CHARACTER DEVELOPMENT. Especially on Celes and Kefka, for some reason I always felt they got nerfed on the background.
What would be different? It would have my artistic vision and Kefka would look like THIS:
