I'd rather spend as much time as necessary to obtain any sigil , I'll play 1000 blitzball matches , dodge million bolts but I don't ever...EVER want to fight Tower for mere Grand Helm just to acquire all accessories!
Tidus (0:0:0 on chocobo race)
Wakka (Endless Blitzballing)
Lulu (200 lightning bolts)
Yuna (defeat all of Belgemene's aeons)
Auron (all fiends in 10 areas)
Kimahri (Butterfly catching)
Rikku (Cactaur village)

I'd say Wakka's, mainly because I haven't gotten it yet. I'm not too good at Blitzball.
As far as the ones I've gotten, I would say Tidus'. It took like several hours to get the required 0.0.0 time on the race in order to get his sigil. I had to get it two different times. First time in my first playthrough, and the second time in my Tidus solo challenge playthrough.
The third worst would be Kimahri's. The butterfly catching minigame was pretty tough, and you didn't have much time to do it.
The others weren't too bad, imo. With Lulu's I just had to maintain good concentration.
It took me foreeeeevvver to get tidus thin were you have to get there in o:oo:oo talk about impossible
