If/when you lose Odin, will you lose access to the Blue Mage class?
My friend Delzethin is currently running a GoFundMe account to pay for some extended medical troubles he's had. I assumed that you meant the classes to be strictly based on what they could learn, rather than a set of limitations that would define what each one would learn after you obtained the necessary GF.
I would say to cut down on the amount of classes and simply use two GFs for each class. Then you could define what stats could be junctioned when you had one GF equipped and what stats could be juncioned when you had two GFs equipped. You would have to be careful to balance it out though so that you don't get two GFs for a single class too soon. I suppose you could do one GF from the top row and one from the bottom on the GF menu for each class.

There would still be some conflicting skills and stuff of that sort, but, with the already conflicting skills that each GF can learn, I'm not sure it's possible to get around that. Well, unless you Card Mod to get skill teaching items.
This idea is absolutely awesome. It's a very creative challenge. But it looks really complicated to keep all the classes, which GF's they are represented by and their abilities/restrictions in the head. xD
Also, FF8 is more heavily dependant on Limitbreaks than any other FF, so I can easily see how the classes that allows "Renzokuken" and possibly some of the other's Limitbreaks will become the most powerful ones. In the worst case, completely overshadowing other classes.
...how about banning Renzokuken completely? xD Of course, it might not be quite that bad thanks to other restrictions (I haven't tried this challenge, so I wouldn't know).
Also, since Odin/Gilgy are both random and allows no junctioning, how can you use them for possible classes?

I have extremely bad news. My external HD seems to have crapped out and it had everything on it, including the emulator i was using to play this game. I don't think I'll be able to complete this challenge until I can figure out how to get it working again if thats even possible.
I did beat edea though, using a party of Ninja, (squall) White Mage (Irvine) and Black Mage (Rinoa).
And then my computer magically shut itself off for no reason whatsoever and now my HDD works again.
I just got to Squall in desert prison last night.
Edit: I also think I should create a armor/weapons list which would restrict what each class can junction. I'm thinking elemental armor and weapons could be created by junctioning two of the same magic type. For example fire armor for a knight could be made from fire junctioned to defense and fira junctioned to elem-defense or fira/firaga. This would make the game a bit more interesting. Restrictions will also keep high HP classes like knight and monk obtain 5000+ HP at level 10 or 15 via magic like regen. I'm considering having no restrictions on what magic a mage can junction, though. Does anyone like this idea and more importantly does it make sense?

Sounds like a good idea. Makes perfect sense, and restricting magic for classes that can otherwise get too good trough junctioning should make it more fun.
