I think FFVI would be neat as an anime. It has a nice cliffhanger for a second season.
Heck they even got an opening and ending for it already.

What about Final Fantasy Last Order?
On a side note I think that DQVIII was basically a big Anime series.
An anime series with atrocious artwork done by the lord of ugly eyes himself.
If it's good and has a cute guy in it, then yes. So far, the current FF animes that I'm aware of don't really seem very "Final Fantasy" at all.

Xenogears is longer than most FF games. No way they could downsize it to a film. Anime series it is with Production I.G. coming back to do it.

Last Order is one of the first things to come out for the Compilation of VII. It details the events of Nibelheim and served as a thirty minute teaser trailer for Crisis Core back when all we knew was its name. It was made by Madhouse. I personally liked it cause it "fixed" a lot of story elements I never liked in the original game. There is still debate whether it should be treated as canon though.

I think FFX/X-2 would be great with a few alterations on the FFX-2 end (nothing too drastic). FFX-2 on it's own would be more successful if it absolutely HAS to stay the same as the game, beginning to end.
FF II would probably make a great anime actually. It'd also be nice to see FF IX made into one as well.
I would LOVE to see FFIV as an anime. Or IX. Or III.
