Out of the choices my recommendations (in no particular order) are as follows:

Silent Hill 2 -- Technically since you already know what the amazing twist is, it is pointless to play it, but you can't get the full effect of Pyramid Head unless you play this game.
Grand Theft Auto: Vice City -- You are right about the soundtrack. I don't care what anyone says, it's better than Grand Theft Auto 3.
Ghosts and Goblins -- I love this game. It reminds me of my childhood, so I am probably bias.
Metroid -- Sure, why not.
Katamari Damacy -- I haven't played it, but from what I've seen and read about it, it sounds like a fun game.
Metal Gear (NES) -- Hee hee
