I don't think Zidane needs to earn the protection of any NPC. I took it as a metaphorical protection like his shop opening. You can protect yourself with his items. As far as the earn part goes, I don't know.

Sorry to make you cry, Lone Wolf Leonhart, but it's not Burmecian Soldier Dan. It's also not Sir Iron-Tail Fratley, of Burmecia. In fact - and this is a very big hint - it's not a Burmecian at all. How's that for a plot twist?

Also, regarding the word "vermin", it is to be taken literally, but remember that the two first lines go together. In other words, "Do I look like vermin to you?" means that the speaker is expressly NOT vermin, but gets called vermin anyway.

I think I've said too much already, but hopefully this helps.

The only time I remember the word "Vermin" being used is by Kuja towards the Cleyrans.
