Its followed by the game deciding to give you a happy ending by pulling out two Deus Ex Machinas on you. Both of them trully come out of nowhere and leaves you scratching your head wondering when your characters could pull crap like that and how the hell did this happen. The best part of the ending is throwing the disc out my PS3.

VIII is my next least favorite mostly cause it pretty much ignores the amount of devastation and chaos caused in the later discs and instead romps you through a happy medley of "it's all right" without actually telling you how its going to be alright. It just felt so anti-climatic.
Had I been able to finish XIII I'd probably agree with you having read a plot summary after the fact. Instead I'll have to agree with you on VIII. Not only did it just ignore most of the characters, the everything's all right home video after the fact didn't make a lot of sense and felt completely out of place.

Leona Lewis destroyed FFXIII's ending more than any poorly developed plot-lines or characters ever could.

One of my favorite games, but I agree. I remember feeling slightly underwhelmed the first time I finished the game.

Best of those I've played: VIII
Worst of those I've played: VII

Despite that, VII remains my favourite game of all time. Endings aren't very important to me, they're more of an added bonus if things go well.

I find FF endings are in general fairly terrible and in possibly every instance (bar possibly VII, due to the minimalism of what we find out from it) the endings don't exactly make sense. VIII and XIII already have been pointed out for their reasons, both perfect examples of this. But I don't really mind that - I find that in games full of magic, nothing is ever really going to make that much sense. Basically from what I've seen, it's a case of "Look, you saved the world, okay? Now shut up and watch the pretty scene." And that's that. Which is probably why it's so rare that I finish an FF game. I also don't finish some because I like to do sidequests etc. just before the end because I know the game is OVER once you beat the final boss (XIII an exception, hence I finished it pretty quickly).
