Though it is a technical name for a certain type of lung disease that exists for the sole purpose of being the longest word in the English language.Also, if that author couldn't think of a real word to describe the dish then he/she wasn't a very good author.
Also it should be noted that the second word that the Cactuar posted was originally a Greek word to describe a dish made up of a whole lot of fish and other things.
